Banana Bread circa 1976

Banana Bread seems to me to sum up the 70's. It smells like the 70's, it looks like the 70's and I can't find a man in his 30's who doesn't love a slice of warm banana bread. This is from a Swedish recipe book, so of course there is cinnamon and ginger included. There are so many recipes for banana bread out there and everyone must find their own, but I really like this version - although I add two extra banana's to make it especially banana-y and moist. I like the middle soft and the top nice and crunchy. I can't see any reason why one would add walnuts to banana bread, although a lot of people do, it's seems to defy the point for me, it's banana bread after all! This one came to the office with me on request and was gone in 20 minutes. Let's hear it for nostalgic food!
