Midnight Cream Tea

It was Jon's birthday on Wednesday, but because I've been shooting all week, we had a midnight cream tea to celebrate instead. So as the clocked ticked over into birthday proper we had strawberry jam, whipped cream and these yummy little cakes. Fairy cakes are so easy to make and take 15 minutes in the oven... That's about the time it takes to set the table and make the tea! Here is Nigella Lawson's super simple fairy cake recipe: Into a mixer place 125g soft butter, 125g caster sugar, 125g self raising flour, 2 eggs and 2 teaspoons of vanilla essence. Pulse until combined and then down the funnel add 3 tablespoons of milk. Spoon into 12 cupcake cases and bake at 380F until golden (approx 15 minutes). I cut the tops off and half to create actual 'wings' to my fairy cakes because nothing says birthday like a cupcake with drama. Truly simple! Happy Birthday! x
