Mince Pies

I love a mince pie. Its a British thing. As a child you are convinced they have minced meat in them and are revolting, revolting in only the way something can be revolting when you are a child. Now I can't get enough of them. I bake them every year, for friends and strangers and go around convincing people they 'really should try one, because they're not actually made of mince'. A born-again mince pie advocate.

This recipe is from Nigella Lawson's 'How to be a Domestic Goddess'. The orange juice in the pastry is what makes them so celestially light. I am ashamed to say I have not yet made my own mince, but one cannot achieve all ones life goals in one go, where would be the fun in that?!
