Cheese Straws

These are wickedly good.

Cheese straws are a tradition in my family. My grandmother made them, my father is crazy about them and I can't get enough of them.  This recipe comes from Tamazin Day Lewis' Kitchen Bible. and while Tamazin can on occasion be insufferably posh ("..if you can't get hold of a whole wild salmon in season, don't bother at all" ... for fish cakes!!!), her Kitchen Bible, really is just that, a British kitchen must have to live by.  All of the recipes are good.  I highly recommend the book.  I make these with real parmesan and Colman's mustard, you have to really. There, that was my Tamazin moment!
